Плов из булгура с бараниной — питательное и ароматное блюдо турецкой кухни.

Булгур — это пшеничная крупа, предварительно распаренная, а потом дробленная.
Очень популярна в странах Ближнего Востока. Ей часто заменяют рис.

Как приготовить плов из булгура с курицей, индейкой и со свининой мы разбирались
здесь.

А сейчас, мы представляем пошаговый рецепт приготовления плова с бараниной.

ПЛОВ ИЗ БУЛГУРА С БАРАНИНОЙ

Нам понадобятся следующие ингредиенты:

* баранина – 600–700 грамм;
* булгур – 4 стакана;
* лук репчатый – 3 шт.;
* морковь – 4 шт.;
* чеснок – 2 головки;
* перец чили – 1 шт.;
* семена кориандра – пол чайной ложки;
* зира – 2 чайных ложки;
* растительное масло – для обжарки;
* оливковое масло – 50 грамм;
* соль – по вкусу.

В прогретый казан наливаем растительное масло. Выкладываем, предварительно
нарезанные кусочки баранины.

Обжариваем на максимальном огне мясо, периодически помешивая.

Нарезаем лук полукольцами, а морковь крупной соломкой.

Убавляем газ до среднего и закладываем лук и обжариваем его до золотистого
цвета.

Добавляем специи: зиру и молотые семена кориандра. Перемешиваем.

Закладываем в казан морковь. Даем ей прогреться минуты три, затем перемешиваем.

Спустя три – четыре минуты добавляем огонь и заливаем кипятком.

Кладем неочищенные две головки чеснока и перец.

Закрываем крышкой и тушим минут пятнадцать.

Солим и готовим без крышки пятнадцать минут на малом огне.

Подготавливаем булгур. В кастрюле с толстым дном обжариваем крупу на оливковом
масле до появления приятного орехового аромата.

Высыпаем булгур в казан к мясу. Аккуратно заливаем кипяток, так чтоб он покрыл
крупу где-то на пол сантиметра. Еще раз солим. Тушим минут десять с открытой
крышкой.

Закрываем крышку. Убавляем газ на минимум и готовим еще минут десять.

После выключения газа даем блюду настоятся еще десять минут.
