It pairs well with lots of different Indian curries. They are made of coconut flour and psyllium husk. They are easy to make and can be frozen and heated up anytime. Net carbs per roti (from MyFitness Pal): 1.2g Cuisine: International Courses: Sides Recipe Keys: dairy-free Dairy Free Gluten Free vegan Vegan V Vegetarian Print Recipe Pin Recipe 0 Add to Favorites Prep Time 5 min Cook Time 5 min Rest Time 20 min Difficulty: Beginner Servings: 10 INGREDIENTS Servings * 1⁄2 cup or 70g Coconut Flour * 2 tbsp. or 8g Psyllium husk * 1⁄2 teaspoon salt * 1.5 cup water * 1 tablespoon oil (avocado oil, olive oil, melted butter or ghee) INSTRUCTIONS Video Off On 1. Take 1/2 cup or 70g of coconut flour 2. Add 2 tbsp. or 8g of psyllium husk 3. Add 1/2 tsp. of salt 4. Mix well 5. Add 1.5 cups room temperature water. The quantity of water is 3 times that of coconut flour 6. Mix well 7. 8. Cover and let this rest for 20 min 9. Add oil 10. Knead into a dough 11. DIVIDE INTO 8 PORTIONS 12. 13. Grease 2 silicone mats with oil You can use parchment paper as well 14. 15. 16. Roll into a ~6 inch circle. You can cut it in a circular shape with a lid or cookie cutter 17. 18. Heat a non stick pan to medium high heat 19. Cook the roti for ~2 min per side or until golden brown spots appear 20. FREEZING ROTIS 1. You can freeze the cooked rotis and heat it up later on a pan or a microwave (~15 sec high power) 2. 3. 4. You can also freeze the rolled roti dough (raw).
