This Keto roti is soft and pliable. It pairs well with lots of different Indian
curries. They are made of coconut flour and psyllium husk. They are easy to make
and can be frozen and heated up anytime.

INGREDIENTS

 * 1⁄2 cup or 70g Coconut Flour
 * 2 tbsp. or 8g Psyllium husk
 * 1⁄2 teaspoon salt
 * 1.5 cup water
 * 1 tablespoon oil (avocado oil, olive oil, melted butter or ghee)


INSTRUCTIONS

 1.  Take 1/2 cup or 70g of coconut flour 

 2.  Add 2 tbsp. or 8g of psyllium husk

 3.  Add 1/2 tsp. of salt

 4.  Mix well

 5.  Add 1.5 cups room temperature water.
     
     The quantity of water is 3 times that of coconut flour 

 6.  Mix well

 7.  

 8.  Cover and let this rest for 20 min

 9.  Add oil

 10. Knead into a dough

 11. DIVIDE INTO 8 PORTIONS

 13. Grease 2 silicone mats with oil 
     
     You can use parchment paper as well

 16. Roll into a ~6 inch circle. You can cut it in a circular shape with a lid
     or cookie cutter

 18. Heat a non stick pan to medium high heat

 19. Cook the roti for ~2 min per side or until golden brown spots appear 

 20. 

FREEZING ROTIS

 1. You can freeze the cooked rotis and heat it up later on a pan or a microwave
    (~15 sec high power)

 4. You can also freeze the rolled roti dough (raw). 
    
    Make sure to layer the rolled dough with parchment paper in between, so they
    don’t stick to each other

    For this coconut flour roti do you have to use the psyllium husk? My diet is
    more restricted.

       Psyllium husk is needed for binding. You could use Xanthum Gum instead.
       You could also try these rotis instead.
