SZECHUAN EDAMAME (SOY BEANS)

This recipe for soybeans is fast and delicious, resulting in a fantastic and
healthy protein-packed snack that can easily replace potato chips. Serve warm.
Note: You don't eat the outer pod of this bean! Put the pod in your mouth, and
use your teeth to pull out the beans inside.

INGREDIENTS

 * 1 (16 ounce) package frozen edamame in the pod

 * 2 teaspoons sesame seeds

 * 3 tablespoons white sugar

 * 2 tablespoons soy sauce

 * 2 teaspoons olive oil

 * 1 teaspoon red pepper flakes, or more to taste

DIRECTIONS

 1. Place edamame pods in a microwave-safe bowl with 1/4 cup water. Cover and
    microwave on high until tender, 4 to 6 minutes. Drain.

 2. Place sesame seeds in a skillet over medium heat; toast until lightly
    golden, about 2 minutes. Add sugar, soy sauce, olive oil, and red pepper
    flakes. Simmer until soy sauce reduces and thickens slightly, about 2
    minutes. Add edamame, toss until coated, and heat for 1 to 2 more minutes.

TIPS

Substitute vegetable oil for the olive oil if desired.

If you don't want them too spicy, just omit the red pepper flakes or add more if
you really want more of a kick.

Amazing!!! So good, my wife and I kept forgetting to take a breath between
mouthfuls haha. I opted for less sugar (2 tbsp instead of 3), another dash of
red pepper flakes, and about 2 chopped garlic cloves. cant wait to try this
sauce on some chicken!

I thought the recipe was a good foundation to work from but too sweet and sticky
for my taste, even cutting back sugar to 2 T was too much for me. I used sesame
oil instead of olive, and added a little minced garlic. I recall eating
something similar in a restaurant and they add a little orange zest. Not sure if
they used the juice as sweeter.

Just like in the restaurants! Browning the sesame seeds was a nice touch. Might
benefit from just a little garlic added after the sesame seeds? (I'll try that
next time, since I can't resist tweaking a good recipe.) I also substituted a
bit of ground black pepper, since I was getting low on crushed red pepper, and
added a half tsp of toasted sesame oil, since I had it. I used a steam-in-bag
pack of edamame that was done in 5 minutes in the microwave, and next time I'll
pour off the extra water from the bag before adding it to the pan. Used some of
the extra sauce in the pan for also adding to grilled-from-frozen salmon
patties, which made a great meal.

This recipe is amazing. I did not have sesame seeds so I used half sesame oil
and half olive oil. I took a previous suggestion of reducing the sugar to 2
tablespoons. It came out perfectly. I will definitely make it again.

We had this at a local Thai restaurant and loved it. I've ordered the Japanese
salt which also is a tremendous flavor. With this recipe kicked up, we can eat
it at home. Don't have a wok but love my grill pan!
