FREE TO BE GLUTEN-FREE: AN INTRODUCTION

“Have you considered that maybe you’re gluten intolerant?”

It was on a Sunday in February of 2020 when my mom asked me that question. I
struggled with severe anxiety, especially at night. I was tired all the time, so
tired that my brother, Samuel, used to tease that I was neither a morning person
nor a night person, but there were five minutes in the day that I was awake. The
thought hadn’t crossed my mind, but I thought I would experiment with an
elimination diet for a month and see what happened. What was the worst that
could happen? Fast forward a month later, I tried gluten again and it didn’t
take long to be sure. My stomach ached, my energy was zapped, and I had
heart-pounding anxiety. I was gluten intolerant.

Even though I spent two years working at a health food store and had a mom with
varying dietary restrictions, I had no idea where to start. How do I begin this
lifestyle for myself? What tasted good? How do I go out to restaurants? Then one
day when I was standing in the gluten free aisle at Walmart, not sure what to
do, an older woman next to me spoke up. “This brand of bread is very good. I
wouldn’t recommend that one however, it’s very dry and not appetizing.” I
thanked her and the woman smiled, “you just looked lost and I wanted to help. I
remember when I started being gluten free and I remember wishing I had someone
to give me tips on what tasted good and what didn’t.” Ever since that day, I’ve
wanted to be just like her.

Three years later, two of my friends told me that they were looking into the
gluten free diet. One friend discovered he was gluten intolerant and the other
discovered his daughter has celiacs. I offered to write up some things I learned
from my time being gluten-free and both of them were very grateful. This was the
inspiration for this blog.

I’ve learned a lot in the three years I’ve been gluten free and I’m still
learning. My hope is that this blog can be a helpful resource to others who are
beginning their gluten free journey and for friends and family trying to figure
out what to serve to their gluten-intolerant loved ones. I want to share what I
have learned with all of you so that you can be free to be gluten-free.
