CRUMBL CINNAMON SWIRL COPYCAT COOKIES- ALL THE FLAVORS OF CINNAMON ROLLS WITH
HALF THE WORK

Crystal’s favorite Crumbl cookies are the Cinnamon Swirl cookies, so naturally,
I had to create a recipe to make them for her. I told her it would probably take
me two tries… she said I could have one try. AND WE DID IT! We recreated it AND,
in both of our opinions, they’re a lot better! They’re softer and have a better
flavor, so you’ll have to give them a try and let us know what you think!

These copycat Crumbl cinnamon swirl cookies are Crystal’s favorite by far, but I
think these cookies and cream copycat cookies might still be my favorite, or
maybe the churro cookies… Oh man, too many good ones to choose from! These are
so dang tasty though so you should definitely make them. Especially if you are
craving cinnamon rolls because these will give you that fix without all the
waiting, rising and rolling and cutting!



TIPS TO MAKE THESE CINNAMON SWIRL COOKIES:

 * You’ll know that you’ve added enough flour when the cookie dough no longer
   sticks to the sides of the mixing bowl and you can pinch the dough without
   any sticking to your fingers. This will give you thick cookies that don’t
   fall flat.
 * For thick fluffy cookies, make sure you’re using fresh baking soda as well.
 * If you want giant cookies like Crumbl, use a 2.5″ cookie scoop like this. For
   small cookies use a 1.5″ scoop like this. Or you could just get a set like
   this so you can make every size you want!!
 * If you want extra soft cookies, take them out of the oven after 10 minutes
   (for the large cookies) and after 8 minutes (for smaller cookies), if you
   want them to be a little more set up, leave them in for a couple more
   minutes.
 * Microwave or cook on the stove top the cinnamon-sugar-butter mixture until it
   is extremely hot and bubbly, this will ensure that it hardens up nicely to
   give you the crunch.
 * Use silicone baking mats to bake your cookies, they will not stick AT ALL and
   they will be so soft and chewy.
 * Let them cool directly on a clean counter or on a sheet of parchment paper so
   they don’t dry out.
 * Use a piping bag or ziploc bag to squeeze the frosting out on top of the
   cookies. Trying to spread frosting will pull up the cinnamon sugar mixture
   and make a mess.

CRUMBLE COPYCAT CINNAMON SWIRL COOKIES

INGREDIENTS

COOKIE DOUGH

 * 1 cup butter, salted
 * 1 1/4 cups granulated sugar
 * 3 eggs
 * 2 tsp vanilla extract
 * 4 cups flour
 * 2 tsp baking soda
 * 3/4 tsp salt
 * 1 tsp cinnamon

CINNAMON SUGAR TOPPING

 * 1/2 cup butter
 * 1 cup granulate sugar
 * 1 TBS cinnamon

FROSTING

 * 1/4 cup butter
 * 4 oz cream cheese
 * 1 tsp vanilla extract
 * dash of salt
 * 2 TBS water or milk
 * 4 cups powdered sugar
 * 1/2 tsp cinnamon (optional)


INSTRUCTIONS

COOKIE DOUGH

 1. Preheat oven to 350° and line a baking sheet with parchment paper or a
    silicone baking mat.

 2. Cream butter and sugar. Stop mixer and scrape sides of bowl. Add vanilla and
    eggs and continue to beat until smooth.

 3. Add 3 cups of flour, baking soda, salt and cinnamon. Once incorporated add
    the last cup of flour. *see notes

 4. Using a cookie scoop, scoop balls of cookie dough and put on lined cookie
    sheet 2" apart. Using a flat surface like a cup, flatten cookies to 3/4in
    thick biscuits.

 5. For 2.5" and larger cookie scoops, bake cookies for 10-12 minutes. For 2"
    cookie scoops and smaller bake for 8-10 minutes. Remove cookies from the
    oven before they start to brown.

 6. Let sit for 5 minutes then move to a clean flat surface to cool completely.

CINNAMON SUGAR TOPPING

 1. STOVE TOP METHOD: In a saucepan, bring butter, sugar and cinnamon to a
    bubbling boil, stirring constantly and remove from heat. Spoon a teaspoonful
    onto each cookie (Tablespoon full for larger cookies). Let cool and harden.

 2. MICROWAVE METHOD: In a microwave safe bowl, microwave on high the butter,
    sugar and cinnamon for 3 minutes. Stopping after each minute to stir. Spoon
    a teaspoonful onto each cookie (Tablespoon full for larger cookies). Let
    cool and harden.

FROSTING

 1. Beat together butter and cream cheese until smooth.

 2. Add vanilla, dash of salt and water or milk.

 3. Add in powdered sugar, 1 cup at a time. After adding all of the powdered
    sugar, beat until completely smooth.

 4. (optional) Mix in cinnamon until fully incorporated.

 5. Spoon frosting into a piping bag or ziploc bag with the corner cut off and
    pipe frosting on top of the cookies AFTER the cinnamon sugar topping has
    cooled.

 6. Store cookies in an airtight ziploc bag for a week or in the freezer for
    months.


RECIPE NOTES

*You will know you have added enough flour when the cookie dough no longer
sticks to the sides of the mixing bowl and you can pinch the dough without any
sticking to your fingers.
