Tips -------------------------------------------------------------------------------- -------------------------------------------------------------------------------- INTRODUCTION Bitter melon soup is a Vietnamese traditional dish. It's loved for its delicious taste, the nutritiousness and simple preparation. With the bitterness of bitter melon, mixed with the sweetness of pork and seafood, bitter melon soup not only enriches the meal but also brings refreshment. With simple ingredients, this dish is also very light. Today, let's learn how to make this delicious dish with me through this recipe! -------------------------------------------------------------------------------- INGREDIENTS * 3-4 Bitter Melons * 500-700gr Minced Pork * 30-50gr Wood Ear Mushroom * 10gr Green Onion * 5gr Red Onion * 3-4 Garlic Cloves * 50gr Dried Shrimps (Not neccessary, but it helps increase the flavor a lot!) * Common spices like: Salt, Sugar, Pepper, MSG, Chicken Bouillon powder and Cooking Oil * 3 tbsp Fish Sauce (This is a must if you want your soup to have that Vietnamese specialty!) -------------------------------------------------------------------------------- HOW TO PREPARE BITTER MELON 🕑Estimated Time: 10-15 minutes Use a small knife to make a vertical cut, use a teaspoon to gently separate, then use the handle of the spoon to gently separate the inside and seeds. Remember to scrape off all the white stuff inside because this is the layer that has a very bitter taste. At the same time, it helps the meat to stick better when stuffing. Then, soak the prepared bitter melon in diluted salt water, wash, and drain. INGREDIENTS PREPARATION 🕑Estimated Time: 10 minutes (30 minutes more for soaking) * Wood Ear Mushrooms: Soak the mushrooms in warm water for about 30 minutes. When the mushrooms bloom and soft, cut them into small pieces. * Red Onions and Garlics: Peel them and then mince throughly until the mixture turns to paste. * Green Onions: Cut the green onions, wash them, then crush the roots and mince them throughly. Keep the green part. -------------------------------------------------------------------------------- LET'S COOK! 🕑Estimated Time: 30-45 minutes 1. First, put the ground meat in a large bowl with 2 teaspoons of fish sauce, 1 teaspoon of seasoning powder, and 1 teaspoon of MSG. Then, add all the remaining ingredients except bitter melon. (That means pepper, garlics, red onions, green onions and wood ear mushroom) 2. Use chopsticks or spoon to mix the spiced minced meat evenly. Remember, the longer you mix this mixture, the more delicious the meat filling of bitter melon soup will be 3. Next, boil water, then add bitter melon and green onion stalks and boil for 15-30 seconds then drain. Then, use a small spoon to stuff the meat into the bitter melon 4. Take the green onion stalk that has just been boiled and tie it around the bitter melon to avoid the core from falling out 5. Cook a pot of 1.5 liters of water with 1 tbsp of fish sauce, 1 tbsp of salt, 1 tbsp of chicken seasoning powder and bring to a boil. 6. When the water boils, add the stuffed bitter melon to the pot and boil for 30 minutes. After 30 minutes, use a chopstick to poke the bitter melon. If you see that the bitter melon has softened, add green onions, coriander and pepper and turn off the stove. -------------------------------------------------------------------------------- TIPS 1. Some people who do not like the bitter taste have a way to handle the bitter taste as follows: Blanch the bitter melon and rub a little sugar inside the bitter melon to help reduce the bitter taste and make the bitter melon sweeter. 2.
