For some dishes like eggs, pancakes, potatoes (foods low in fat) you may need to lower the heat and add a source of fat (ie butter, ghee, oil). Since our pans are engineered to conduct heat very efficiently, typically dishes can be cooked at low-medium heat levels on your stovetop dial. While, in other cookware, to achieve similar results the heat must be cranked all the way up. It's possible that cooking on too high of heat can cause some sticking on foods lower in fat content (ie: eggs). Don't be afraid to turn your heat ALL the way down and work your way up from that.
