DIRECTIONS

 1. Preheat griddle over medium-high heat. Whisk together flour, sugar, baking
powder and salt. Combine egg, milk and melted butter; stir into dry
    ingredients just until moistened.
 2. For each bunny, make a pancake 4 in. wide for the body, a pancake 2-1/2 in.
wide for the head, two small oval-shaped pancakes for the feet and two small
triangular pancakes for the ears. Spoon batter onto griddle; cook until
bubbles form on top of pancakes. Turn; cook until second side is golden
    brown.
 3. To form bunny, place ears at the top of a plate. Place head slightly
overlapping the bottom of the ears; top with body slightly overlapping head
    and feet slightly overlapping body. Place a banana slice on each foot;
arrange mini chocolate chips at the end of each foot for toes. Dollop
whipped cream on body just above the feet; sprinkle with coconut for the
    tail. Serve immediately.

BUNNY PANCAKES TIPS

HOW CAN YOU TELL WHEN BUNNY PANCAKES ARE READY TO FLIP?

You’ll know when the pancakes are ready to flip when little bubbles start to
form on top of the pancakes. After you flip them, take a peek at the bottoms as
they cook. Take them off the griddle once they're golden brown.

HOW CAN YOU MAKE SURE BUNNY PANCAKES ARE FLUFFY?

Fluffy pancakes are the best pancakes! To make sure your bunny pancakes are as
fluffy as possible, avoid overmixing the batter once you've combine all of the
ingredients; overmixing causes pancakes to be tough and chewy. If you’re not in
a rush to get breakfast on the table, let the batter rest for a bit before
scooping it onto the hot griddle; this allows the proteins to relax before
cooking. Check out our guide on how to make homemade pancakes for more tips. If
you don't have time to make your pancake batter from scratch, you can whip them
up with a box mix—just check out our guide on how to make pancake mix better
before you get started.

HOW CAN YOU MAKE BUNNY PANCAKES YOUR OWN?

There are lots of different ways you can customize these pancakes, but no matter
how you choose to do it, using a squeeze bottle filled with pancake batter is a
great way to get perfectly shaped pancakes. To make pretty pastel pancakes,
consider adding a few drops of food coloring. Or if you prefer your bunnies
polka-dotted, mix in some blueberries or mini chocolate chips. To give the
fluffy tail a little color, toast the sweetened shredded coconut before
sprinkling it on top of the whipped cream. To fit some more fruit into this
breakfast, replace the pancake bunny ears with banana halves that have been
sliced lengthwise. Take the cuteness factor over the top by serving them with
some strawberry hearts. Look for berries that have rounded tops and pointed
bottoms, then use the tip of a sharp paring knife to cut out their leaves and
cores. Slice in half and plate! If you love these bunny pancakes, try more
bunny-shaped recipes even after Easter has come and gone.
